| Boiled cho-cho pudding |
| Pudding with cho-cho (chayote) and currants. |
What you need....
- 4 ozs. grated bread
- 4 ozs. currants
- 3 tbsps sugar
- 1 lime
- 2 large cho-cho's
- 8 cloves
- cinnamon
- nutmeg

How to prepare...
First, prepare the cho-cho's for the pudding:
- boil 2 large cho-cho's with 8 cloves and a small bit of cinnamon
till tender
- remove the seeds and strings, after which mash the cho-cho's well
and squeeze out all the water which will be plentiful
- this will be easily done by putting them into a clean dry cloth
and wringing them well
- mix the pulp with a couple tablespoon full of sugar, some grated
nutmeg and the squeezed juice of the lime
(it is hard to say how much sugar, nutmeg and lime juice you exactly
need, it depends on the size of the cho-cho's you use and.... your
taste!)
Second, the pudding:
- mix the bread, currants and sugar together
- add the cho-cho's (prepared as above) and the well beaten eggs
- pour it into a buttered mould with a cover and boil it for 2 hours
- serve the pudding hot with sugar sauce, or cold with a custard round
