Jelly roll
Jelly with flavor of guava or orange.
What you need....
  • 3 eggs
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1 tsp. vanilla
  • 3/4 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup guava jelly or orange marmalade
How to prepare...
  1. preheat the oven at 350°F / 175°C
  2. line jelly roll pan with waxed paper, grease
  3. in a large mixing bowl, beat the eggs for about 5 minutes or until it is very thick and lemon colored
  4. gradually beat in the granulated sugar
  5. on a low speed, blend the water and the vanilla
  6. gradually add the flour, baking powder and salt, beating just until the batter is smooth
  7. bake in the oven for 12 to 15 minutes, or until a wooden peak inserted comes out clean
  8. loosen cake and edges of pan, invert on towel, sprinkle with confectioner's sugar
  9. carefully remove the waxed paper, trim the edges if necessary
  10. while hot, roll cake in one towel
  11. soften the jelly or marmalade by beating with a fork, spread it over the cake
  12. roll up again and sprinkle with confectioner's sugar
