| Jelly roll |
| Jelly with flavor of guava or orange. |
What you need....
- 3 eggs
- 1 cup granulated sugar
- 1/3 cup water
- 1 tsp. vanilla
- 3/4 cup flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2/3 cup guava jelly or orange marmalade

How to prepare...
- preheat the oven at 350°F / 175°C
- line jelly roll pan with waxed paper, grease
- in a large mixing bowl, beat the eggs for about 5 minutes or until
it is very thick and lemon colored
- gradually beat in the granulated sugar
- on a low speed, blend the water and the vanilla
- gradually add the flour, baking powder and salt, beating just until
the batter is smooth
- bake in the oven for 12 to 15 minutes, or until a wooden peak inserted
comes out clean
- loosen cake and edges of pan, invert on towel, sprinkle with confectioner's
sugar
- carefully remove the waxed paper, trim the edges if necessary
- while hot, roll cake in one towel
- soften the jelly or marmalade by beating with a fork, spread it
over the cake
- roll up again and sprinkle with confectioner's sugar
