Ginger flavored fruit jelly
Jelly with apples, bananas and ginger beer.
What you need....
  • 1/2 lb. otaheite apples
  • 1/2 cup granulated sugar
  • 1/2 lb. ripe bananas
  • 3/4 cup water
  • 1 envelope unflavored gelatin
  • 1 pint ginger beer
  • some fresh yogurt
How to prepare...
  1. peel and cut up the otaheite apples into pieces of 1/2 inch
  2. in a mixing bowl, combine the apples and the sugar
  3. let stand for about 1/2 hour, stirring occasionally
  4. in the meantime peel and split the bananas in three down yards by pushing your little finger through each top to bottom
  5. cut each strip into 1/2 inch lengths
  6. combine the bananas and the apples together
  7. heat water in a sauce pan
  8. stir in the gelatin continuously until it is dissolved
  9. remove it from the heat and pour the gelatin mixture into a deep bowl
  10. stir in the apples/bananas mixture with sugar until the sugar is dissolved
  11. set a bowl in the refrigerator to chill
  12. when the jelly is half set, pour in the icy cold ginger beer and quickly stir it into the fruit jelly (don't let the foaming of the beer bother you)
  13. continue chilling it until it is well set
  14. serve in ice cream dishes, each with dollops of yogurt at top
And... enjoy!
