| Yam fruitcake |
| Delicious cake (or pudding) with yellow yams |
What you need....
- 18 ozs. dark sugar
- 3 eggs
- 1 tbs. browning
- 1 cup flour
- 1/2 cup wine and rum, mixed together
- 8 ozs. margarine
- 2 lbs. yellow yams, grated
- 3 tsps. baking powder
- 1/2 lb. mixed fruits of your choice, soaked in white wine

How to prepare...
- preheat the oven at 350°F / 175°C
- cream the margarine and sugar
- add the eggs, one at a time
- beat in the grated yellow yam
- add flour and baking powder
- fold in alternately with the wine mixture
- add the fruits which have been soaked in the wine
- add 1 tablespoon browning and stir well
- grease a cake tin and pour in the mixture that should be of a dropping
consistency
- bake in the oven for about 1 hour or until an inserted knife comes
out clean
Instead of baking in the oven you also can steam the mixture to create
pudding. |
