Yam fruitcake
Delicious cake (or pudding) with yellow yams
What you need....
  • 18 ozs. dark sugar
  • 3 eggs
  • 1 tbs. browning
  • 1 cup flour
  • 1/2 cup wine and rum, mixed together
  • 8 ozs. margarine
  • 2 lbs. yellow yams, grated
  • 3 tsps. baking powder
  • 1/2 lb. mixed fruits of your choice, soaked in white wine
How to prepare...
  1. preheat the oven at 350°F / 175°C
  2. cream the margarine and sugar
  3. add the eggs, one at a time
  4. beat in the grated yellow yam
  5. add flour and baking powder
  6. fold in alternately with the wine mixture
  7. add the fruits which have been soaked in the wine
  8. add 1 tablespoon browning and stir well
  9. grease a cake tin and pour in the mixture that should be of a dropping consistency
  10. bake in the oven for about 1 hour or until an inserted knife comes out clean

Instead of baking in the oven you also can steam the mixture to create pudding.
