| Coffee cake |
| Wonderful cake with the taste of coffee. |
What you need....
- 4 ozs. butter or margarine
- 4 ozs. caster sugar
- 2 eggs
- 8 ozs. plain flour
- 1 teaspoon baking powder
- 2 teaspoons instant coffee
- 3 tsp. milk
- some coffee icing
- peanuts

How to prepare...
- preheat the oven at 430°F / 220°C
- cream the butter (or margarine) and sugar until very light
- add the eggs one at a time with a dessertspoon of flour
- beat well
- sift the flour, baking powder and coffee and fold lightly into the
mixture with the milk
- pour into a greased cake tin and spread evenly
- bake in the oven for 30 to 40 minutes until firm
- use coffee icing and top the cake with peanut halves
