Christmas cake
A famous recipe for X-mas.
What you need....
  • 1/2 lb. butter
  • 1 teaspoon almond flavoring
  • 6 ozs. bread crumbs
  • 1 tsp. mixed spice
  • 2 teaspoons lime or orange rind
  • 4 cups mixed fruits - raisins, currants, prunes, citron, cherries, dates...
  • 6 ozs. flour
  • 1 cup white rum
  • 1 tsp. browning
  • 6 eggs
  • 1 teaspoon baking powder
  • 1 pint port wine
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts
How to prepare...
  1. preheat the oven at 250°F / 120°C
  2. prepare tin by lining sides with 2 thickeness of paper and the bottom with 4 thicknesses of brown paper and 1 of grease-proof paper
  3. grease with shortening
  4. beat butter and sugar until light and fluffy
  5. mix in browning vanilla and almond flavoring
  6. then add and mix in the lime juice and rind
  7. add the eggs one at a time and beat in well
  8. add the soaked fruits, cherries, dates and nuts
  9. mix the breadcrumbs, flour, baking powder, salt and mixed spice
  10. add alternately the white rum and the port wine
  11. pour into the prepared baking tin and bake it in the over for about 2 hours
  12. merry x-mas!
