| A cake muffin with a hint of pineapple |
What you need....
- 1/3 cup shortening
- 2 teaspoons baking powder
- 1 1/4 cups sifted flour
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup pineapple syrup
- 1/2 teaspoon grated lime peel
- 1 egg

How to prepare...
- preheat the oven at 375°F / 190°C
- combine all dry ingredients
- add the pineapple syrup, grated lemon lime peel and the slightly beaten egg
- mix to make a think batter and pour over pineapple syrup
- bake in the oven for about 30 minutes or till done
- let stand for 15 minutes and serve
