Coconut fruit cake
A fruity cake with cherries, coconut and peanuts
What you need....
  • 1 pk. ready-made cake mix
  • 1/4 lb. cherries, chopped
  • 1/2 lb. raisins
  • 1/4 lb. mixed peel, chopped
  • 1 1/2 cup water
  • 4 eggs
  • 1/2 cup cooking oil
  • 2 cups grated coconut
  • 1/2 cup peanuts, chopped
  • 1/2 cup cashew nuts, chopped
How to prepare...
  1. preheat the over at 350°F / 175°C
  2. in a mixing bowl, combine cake mix well with the cherries, raisins, peel, water, eggs and oil
  3. beat mixture in an electric mixer at medium speed for 4 1/2 minutes
  4. stir in the coconut and the other nuts
  5. pour into 2 greased and lightly floured 1/2 inch cake pans, equal quantities of the cake mixture
  6. bake in the oven for 35 minutes (until a knife inserted comes out dry)
  7. cool the cakes in pans for 25 minutes
  8. turn out the cakes and place them each on the bottom of the cake pans, turned upside down to further cool off
  9. serve when the cakes are at room temperature
