| Coconut fruit cake |
| A fruity cake with cherries, coconut and peanuts |
What you need....
- 1 pk. ready-made cake mix
- 1/4 lb. cherries, chopped
- 1/2 lb. raisins
- 1/4 lb. mixed peel, chopped
- 1 1/2 cup water
- 4 eggs
- 1/2 cup cooking oil
- 2 cups grated coconut
- 1/2 cup peanuts, chopped
- 1/2 cup cashew nuts, chopped

How to prepare...
- preheat the over at 350°F / 175°C
- in a mixing bowl, combine cake mix well with the cherries, raisins,
peel, water, eggs and oil
- beat mixture in an electric mixer at medium speed for 4 1/2 minutes
- stir in the coconut and the other nuts
- pour into 2 greased and lightly floured 1/2 inch cake pans, equal
quantities of the cake mixture
- bake in the oven for 35 minutes (until a knife inserted comes out
dry)
- cool the cakes in pans for 25 minutes
- turn out the cakes and place them each on the bottom of the cake
pans, turned upside down to further cool off
- serve when the cakes are at room temperature
