| Tie-A-Leaf |
| An exotic breakfast or lunch recipe |
What you need....
- 1 lb. cornmeal
- 2 oz. flour
- 1/2 lb. sugar
- 1/2 cup grated coconut
- 1 tsp. cinnamon
- 1 tsp. mixed spice (use your imagination!)
- 1 tsp. salt
- 1tbs. molasses
- 2 tsp. vanilla
- 2 1/2 cups coconut milk (or reconstituted skimmed milk)
- quailed banana leaves or aluminum foil

How to prepare...
- blend all dry ingredients and the grated coconut thoroughly
- mix together: milk, molasses, vanilla and add this to the dry ingredients,
stirring briskly
- place 1 cup of the mixture into quailed banana leaves (or use aluminum
foil instead)
- make a drug store, wrap and tie with twine or banana bark or
- pour one cup of the mixture into cooking bags and tie the bags with
twine
- cook the small parcels into boiling water, enough to cover them,
for about 40 minutes or until done
Grated coconut can be added for a good 'bite' and extra nutty flavor.
Serve with vegetables of your choice and lemonade made from brown sugar. |
