| Easy to make side dish with mince and garden-egg (or aubergine) |
What you need....
- 1 large garden-egg
- mince
- butter
- breadcrumbs
- pepper (based on your taste)
- herbs (based on your taste)

How to prepare...
- cut the large garden-egg open the long way
- take out the inside, leaving the backs to form a sort of dish
- boil the pulp tender, and mix it with the well seasoned mince and
a little butter
- put it into the scooped out backs
- sprinkle bread crumbs over it
- put some dabs of butter on the top and bake
