| Frankfurters with cornbread topping |
| Spicy topping for lovely frankfurters |
What you need....
- 1 tbs. margarine
- 1/2 hot pepper, chopped
- 1/2 sweet pepper, chopped
- 1/2 lb. frankfurters, sliced 1/2 inch thick
- 1 onion, chopped
- 1 cup cornmeal
- 1 cup flour
- 2 tbs. sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 egg
- 1 cup milk
- 2 tbs. cooking oil

How to prepare...
- preheat the over at 375°F / 190°C
- melt the margarine in a frying pan
- add the peppers, onion and frankfurter slices and simmer for 2 to
3 minutes
- arrange the frankfurters in the bottom of a five cup casserole
- in a mixing bowl, combine cornmeal, flour, sugar salt and baking
powder
- beat the egg and add to milk and oil
- pour on the dry ingredients and beat until smooth
- pout over frankfurter mixture and bake in the oven until the topping
is done
