Frankfurters with cornbread topping
Spicy topping for lovely frankfurters
What you need....
  • 1 tbs. margarine
  • 1/2 hot pepper, chopped
  • 1/2 sweet pepper, chopped
  • 1/2 lb. frankfurters, sliced 1/2 inch thick
  • 1 onion, chopped
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tbs. sugar
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1 egg
  • 1 cup milk
  • 2 tbs. cooking oil
How to prepare...
  1. preheat the over at 375°F / 190°C
  2. melt the margarine in a frying pan
  3. add the peppers, onion and frankfurter slices and simmer for 2 to 3 minutes
  4. arrange the frankfurters in the bottom of a five cup casserole
  5. in a mixing bowl, combine cornmeal, flour, sugar salt and baking powder
  6. beat the egg and add to milk and oil
  7. pour on the dry ingredients and beat until smooth
  8. pout over frankfurter mixture and bake in the oven until the topping is done
