Corn and bean casserole
Tasty recipe with mayonnaise and Worcestershire sauce
What you need....
  • 1 tin whole kernel corn
  • 1 tin butter beans
  • 4 medium tomatoes
  • 3 1/2 tbs. onion, chopped
  • 1 1/2 lb. butter
  • 3 1/2 tb sp. mayonnaise
  • 2 1/2 ozs. fresh breadcrumbs
  • 1/2 tsp paprika
  • 1 1/2 tsp. Worcestershire sauce
  • 1 egg, white
  • 1/2 tsp. minced parsley
  • rashes of bacon
  • salt and pepper (based on your taste)
How to prepare...
  1. preheat the over at 375°F / 190°C
  2. drain the corn and beans, mix together
  3. put both in a buttered casserole
  4. skin the tomatoes and cut them into thick slices
  5. arrange the slices on top of the corn and beans
  6. top this with the chopped onion
  7. dot with butter and sprinkle with salt and pepper to taste
  8. cut the bacon into small pieces and arrange this over the onion
  9. bake in the oven for about 20 minutes
  10. remove from the oven
  11. blend together the mayonnaise, bread crumbs, Worcestershire sauce and the paprika
  12. beat egg white until stiff and fold into the mayonnaise mixture
  13. scoop this on top bacon and sprinkle on parsley
  14. return to the oven and bake until the egg mixture is firm and browned lightly on top
