Cook up rice
Cooked rice with meat and Angostura
What you need....
  • 1/2 lb. cooked meat
  • 1/4 lb. salted meat
  • 4 1/5 cups water
  • 2 or 3 blades escallion
  • 2 tsp. cooking oil
  • 2 cups rice
  • 1 onion, chopped
  • 1 or 2 tomatoes, sliced
  • 1 tsp. brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. Angostura Aromatic Bitter
  • thyme or parsley (based on your taste)
  • pepper (based on your taste)
How to prepare...
  1. wash and soak the salt meat and prepare the seasonings
  2. heat the oil and fry the sugar till it bubbles
  3. add the seasonings, fry till golden brown
  4. cut the salt meat into neat pieces
  5. add it to the seasonings with the water, rice and salt
  6. put to boil
  7. if needed, remove skin and bones from the cooked meat, cut it into pieces
  8. add the meat to the rice when it is nearly done
  9. at the end, add a tablespoon butter and the Angostura to the rice with meat
  10. serve hot
