| Avocado Jamaican |
| Spicy avocado with rum, Tabasco and Pickapeppa |
What you need....
- 1 tsp. dark Jamaica rum or 2 tsp. white Jamaica rum
- 2 tsp. butter
- 1 1/2 tsp. tomato ketchup
- 1 tsp. warm water
- 1 tsp. wine or malt vinegar
- 1/4 tsp. salt
- 1/2 tsp dry mustard, powdered
- 4 whole cloves
- 2 drops Tabasco hot pepper sauce
- 1 tsp. Pickapeppa sauce
- 1 tsp. granulated sugar
- 2 ripe avocados, cut into halves

How to prepare...
- prepare a spicy hot sauce by combining all the ingredients, except
the Jamaica rum and the avocado
- chill the avocados
- cut them in half at the last moment to avoid discoloration
- bring the sauce to a boil in a heavy sauce pan, stirring constantly
- reduce the heat, cover the sauce pan and simmer over low heat for
about 15 minutes
- if you want to, remove the cloves
- stir in the Jamaica rum, then reheat but do not boil again
- cut the avocados in half, and serve the sauce in the centers of
the ripe avocados
If you don't have Pickapeppa sauce, Worcestershire sauce will do fine
too.
Serve as a side dish or as a special course.
