| Ackee and cheese filling |
| Smooth filling, excellent for cocktail hors d'oeuvres |
What you need....
- 1 doz. ackees
- 1/5 lb. any sharp but soft cheese
- a pinch of hot pepper
- a pinch of salt
- 1 teaspoon grated onion

How to prepare...
- clean and cook the ackees
- in a bowl of an electric mixer, combine all the ingredients and mix until it is smooth
Serving suggestions:
- as a dip for cocktails
- to fill small baked pastry cases
- to spread on fried toasted bread
- to fill cocktail biscuits
