Polly chicken and sauce
Chicken meat with a fruity sauce
What you need....
  • 3 lb. chicken
  • 1 onion
  • 2 tsp. salt
  • 1 stalk escallion
  • 1 sprig thyme
  • 1 peg garlic
  • 4 tsp. breadcrumbs
  • 1 egg
  • 4 tsp. flour
  • 1/2 cup cooking oil
  • 1 medium carrot
  • 1 sprig parsley
  • 2 tsp. cornstarch
  • 1/4 cup sugar
  • 4 tsp. orange juice
  • 2 tsp. margarine
  • 1 cup boiling water
  • 1 tsp. orange rind
How to prepare...
  1. wash, dry and joint the chicken and the seasoning
  2. beat egg with a tablespoon water
  3. roll each piece of chicken in flour, then in the egg, then in the beard crumbs
  4. fry in deep fat till golden brown
  5. to prepare the sauce:
    • place the orange rind to boil in water for 2 minutes
    • mix the cornstarch, sugar and salt
    • add the margarine, chopped carrot, parsley and the water
    • boil to thicken, consistency must be thick
    • remove from the fire and add the orange juice
  6. just before serving, pour a little it of the sauce over the chicken and keep the rest separate for you and your guests
