| Jamaican Jerk chicken |
| Jamaica's most famous and spicy recipe! |
What you need....
- 4 lb. boneless chicken
- 6 stalks escallion
- 3 cinnamon leaves
- 2 oz. pimento, pounded
- 1 teaspoon nutmeg
- 4 hot peppers, unseeded
- 1/2 cup brown sugar
- salt (based on your taste)

How to prepare...
- combine and pound all ingredients (except the chicken) to a paste
- rub the paste into the chicken parts
- place it into a covered dish to marinate for about 1 hour
- place the meat on a grill over a slow charcoal fire (made of pimento wood is the best) to cook until the meat becomes brown
- serve hot with bread
If your partner does not allow you to make a romantic charcoal BBQ in your living room, you also can prepare the chicken in a grill-pan. The result is not exactly the same, but not bad after all - and you partner stays happy too.
