| Rice and mushrooms |
| Rice with mushrooms cooked beef or chicken broth. |
What you need....
- 1/2 cup brown rice, uncooked
- 1/2 cup white rice, uncooked
- 2 tsp. butter or margarine, divided
- 1/2 cup chopped onion
- 2 cups chicken of beef broth
- 1/2 tsp. thyme leaves, dried
- 1/8 tsp. black pepper, ground
- 1/8 tsp. basil leaves, dried
- 1 1/2 cup sliced mushrooms
- 2 tsp. parsley, chopped

How to prepare...
- preheat the over at 350°F / 175°C
- place brown rice into shallow 2 to 3 quart baking dish
- melt 1 tablespoon butter in a 2 quart saucepan over medium high
heat
- add the onion, cook and stir it fir 3 to 5 minutes until the onion
is tender
- add broth, thyme, pepper and basil
- bring it to a boil and pour over the brown rice
- cover and bake it in the oven for about 30 minutes
- melt the remaining 1 tsp. butter in the same sauce pan, then add
the mushrooms
- cook and stir it for 3 to 5 minutes or until the mushrooms are tender,
then remove from heat
- add the mushrooms and the white rice to the brown rice
- cover it an continue to bake until the rice is tender, about 30
minutes
- add the parsley, stir gently and serve
