Jamaican Jerk pork
A very Jamaican and very easy to make Jerk recipe!
What you need....
  • 4 lbs. pork - chops or lion
  • 2 oz. roasted pimento - pound
  • 4 stalks escallion
  • 4 cinnamon leaves
  • 3 peppers - all chop
  • 1 teaspoon nutmeg - grated
  • a charcoal fire
How to prepare...
  1. combine and pound all ingredients (except the pork) to a paste
  2. rub the paste into the pork and leave it to marinate for about 1 hour
  3. place the meat over a slow charcoal fire, preferred made from pimento wood
  4. when the meat is brown and done, serve it with bread

If you can't create a charcoal fire in your brand-new kitchen, you also can prepare the meat in a grill-pan. The result is not exactly the same, but not bad after all.
