| Chicken and green peas |
| A classic chicken recipe with green peas and carrot |
What you need....
- 3 lb. chicken tights
- 1 cup coconut juice
- 1/2 lb. carrot, diced
- 1 oz. butter or margarine
- 2 tsp. lime juice
- 1 green pepper
- 1 tsp. garlic powder
- 2 cups green peas
- 1 lb. white rice
- 1 small onion
- some celery
- 1 cup brown sugar
- cooking oil

How to prepare...
- remove the skin from the chicken, cut it into 2 to 3 inches
- season the flesh with salt, onion, green pepper and garlic powder
- cover it and leave it for 20 minutes
- in the meantime, cook the peas until tender
- heat the cooing oil in a sauce pan until hot
- remove the seasoning from the chicken and and place it into the sauce pan
- fry until it is golden brown
- add the cooked peas, sugar and the seasoning while frying, turning frequently
- add the rice, continue turning until all are brown
- add the carrot, coconut juice and some water to cover the food
- bring to a boil
- add the butter and some green pepper with the stem
- cover it and cook until cooked
