| Chicken pie |
| A tasty pie from the oven with chicken, eggs and frankfurters. |
What you need....
- 3 lbs. dressed chicken
- flour
- 6 tsp. butter or margarine
- 1/2 lb. lean ham, diced
- 1 cup dry white wine
- 1 sprig thyme
- 1 sprig marjoram
- 3 hard boiled eggs, sliced
- 8 frankfurters, cut in 1 inch lengths
- Puff pastry, your favorite
- based on your taste:
- salt
- pepper
- garlic powder
- onion

How to prepare...
- preheat the oven at 425°F / 220°C
- chop the chicken into table sized pieces, then each piece in halves
- season them with salt, pepper and garlic to your taste
- coat each piece lightly with flour
- melt the butter into a heavy casserole
- in it, sauté finely chopped onions and ham until the are golden brown
- remove the onion and the ham, reserve them
- brown the chicken lightly on all sides
- heat the wine and pour over the chicken
- return the sauted onion and ham and stir
- sprinkle on thyme leaves and marjoram and also salt, pepper and garlic powder to your taste
- stir casserole again
- cover the casserole and cook the chicken over a low flame for about one hour
- transfer chicken, ham and sauce to a baking dish
- arrange on top the sliced boiled eggs and the frankfurters pieces
- roll over you favorite puff pastry to about 1/8 inch thick and a quarter inch larger than all round size of the baking dish
- spread the pastry over the dish
- damp under side edge of pastry and fold the edge under
- seal pastry to rim of dish with a little cold water and press it firmly on
- with a scissors clip pastry through in 4 or 5 pieces at the center to make air vents
- brush the pastry with beaten egg and bake it in the preheated oven for about 30 minutes or until the pastry is golden brown
- serve hot
