Barbecued chicken
Chicken meat with ginger and olives from the BBQ.
What you need....
  • 4 lbs. chicken
  • 1/2 black pepper
  • 1/2 tsp. powdered ginger
  • 1/2 tsp. smoked curing salt
  • 3/4 lb. pitted olives
  • 3 lbs. butter or margarine
  • 1/2 cup strawberry syrup
How to prepare...
  1. prepare coals to heat somewhere between 275°F / 135°C
    (to test the readiness of heat you should be able to hold your hand over the live coals at least 2 to 3 seconds at a high where the food is to be barbecued)
  2. remove the skin and fat from the chicken, the debone it
  3. cut the chicken into 1 1/2 inch pieces and wipe them dry
  4. place chicken flesh in a bowl
  5. mix together with the black pepper, powdered ginger and smoked curing salt
  6. season the chicken pieces with the seasoning mixture
  7. place 1 pitted olive on each skewer, then next to it a piece of chicken, then a pitted cherry
  8. proceed with this arrangement until all skewers are filled and the pieces of chicken used up
  9. melt butter and combine it with the strawberry syrup, keep this mixture warm
  10. place skewers about 8 inches above the fire and broil chicken on all sides until golden brown
  11. baste chicken and fruits by painting them with the warm syrup - butter mixture
  12. keep broiling and basting while turning the skewers round and round
  13. broil until the chicken is done and well glazed

Note:
In the original recipe 1/2 tsp. M.S.G. (Monosodium Glutamate) has to be added to the seasoning. There is a lot of said and written about this flavor enhancer and we are certainly not a fan of this kind of additives.
It is up to you if you want to use it or not.
