| Turtle stew |
| An exotic dish with lime-juice and sherry |
What you need....
- 2 lbs. of turtle meat
- 1 quart of water
- based on your taste:
- cinnamon
- nutmeg
- black pepper, fresh or powder
- 10 or 12 cloves
- 1 or 2 onions
- a few tomatoes
- parsley
- thyme
- herbs (optional)
- dry or medium dry sherry
- a little fresh lime juice
- 1 tsp. flour
- salt

How to prepare...
- wash the meat well with the salt and the lime juice
- put it into a quart of cold water
- add a stick of cinnamon, onions, a few tomatoes, some parsley, thyme, pepper and (optional) other herbs
- stew gently for about 3 hours, adding water now and then if the level gets to low
- about a quarter of an hour before serving, mix a tablespoon of flour smoothly with a little water, sufficient liquid to pour into the pot to thick in the stew, stir
- at the last minute put in a dessertspoon of sauce and a half a glass of the sherry
- mix well and garnish with slices of lime
- serve with a cut lime to squeeze over the meat
