Turtle stew
An exotic dish with lime-juice and sherry
What you need....
  • 2 lbs. of turtle meat
  • 1 quart of water
  • based on your taste:
    • cinnamon
    • nutmeg
    • black pepper, fresh or powder
    • 10 or 12 cloves
    • 1 or 2 onions
    • a few tomatoes
    • parsley
    • thyme
    • herbs (optional)
    • dry or medium dry sherry
    • a little fresh lime juice
    • 1 tsp. flour
    • salt
How to prepare...
  1. wash the meat well with the salt and the lime juice
  2. put it into a quart of cold water
  3. add a stick of cinnamon, onions, a few tomatoes, some parsley, thyme, pepper and (optional) other herbs
  4. stew gently for about 3 hours, adding water now and then if the level gets to low
  5. about a quarter of an hour before serving, mix a tablespoon of flour smoothly with a little water, sufficient liquid to pour into the pot to thick in the stew, stir
  6. at the last minute put in a dessertspoon of sauce and a half a glass of the sherry
  7. mix well and garnish with slices of lime
  8. serve with a cut lime to squeeze over the meat
