| Tripe and bean surprise |
| Fast and easy to make recipe with tripe, beans and carrots |
What you need....
- 1 pint beans
- 1/4 lb. flour
- 1/4 lb. breadfruit flour
- 1/2 lb. coco
- 1 1/4 lbs. tripe
- 1 lb. yellow yam
- 1 tsp. margarine
- 2 lbs. carrots
- 1/2 cup string beans
- 1 sprig thyme
- 1 peg garlic
- 1 stalk escallion
- 1/4 tsp. black pepper
- 1 green pepper

How to prepare...
- wash the beans
- place in cold water, put on to boil
- when the water starts boiling, add the tripe
- when tender, add yam, coco, dumplings and carrot
- when this is done, add the seasoning and simmer for about 5 minutes
