| Stewed kidneys |
| Pig's kidneys stewed with Irish potatoes and wine. |
What you need....
- 4 pig's kidneys
- some salted cold water
- 1/2 lb. Irish potatoes
- 3 tsp. cooking oil
- 1 pint boiling water
- 2 onions, sliced
- 1/4 cup tomatoes, chopped
- 1/4 country pepper, seedless and chopped
- 1/2 cup dry cooking wine
- 1/2 tsp. marjoram
- 1/2 tsp. thyme
- salt and pepper (based on your taste)

How to prepare...
- remove sacs fro the kidneys and slice them into 1/2 inch widths
- remove all fat
- place the kidneys in a container and cover them with the salted water
- allow to remain for 1 hour
- in the meantime, peal or scrape the potatoes and quarter them
- heat oil in a 'Dutch Pot', fry the potatoes on all sides until dark brown
- reserve the potatoes
- drain the salted water from the kidneys, pour boiling water in them, drain off the water
- season the kidneys with onions. escallion, tomatoes, country pepper, and (if needed) salt and pepper
- reheat the oil remaining in skillet, add more if you care
- place the kidneys with the seasoning in the pot and cover
- simmer for about 20 minutes stirring occasionally
- mash 3 pieces of potatoes
- pour in the cooking wine
- add mashed potatoes and stir in the marjoram and thyme
- simmer for 10 minutes
- serve while hot
