Stewed kidneys
Pig's kidneys stewed with Irish potatoes and wine.
What you need....
  • 4 pig's kidneys
  • some salted cold water
  • 1/2 lb. Irish potatoes
  • 3 tsp. cooking oil
  • 1 pint boiling water
  • 2 onions, sliced
  • 1/4 cup tomatoes, chopped
  • 1/4 country pepper, seedless and chopped
  • 1/2 cup dry cooking wine
  • 1/2 tsp. marjoram
  • 1/2 tsp. thyme
  • salt and pepper (based on your taste)
How to prepare...
  1. remove sacs fro the kidneys and slice them into 1/2 inch widths
  2. remove all fat
  3. place the kidneys in a container and cover them with the salted water
  4. allow to remain for 1 hour
  5. in the meantime, peal or scrape the potatoes and quarter them
  6. heat oil in a 'Dutch Pot', fry the potatoes on all sides until dark brown
  7. reserve the potatoes
  8. drain the salted water from the kidneys, pour boiling water in them, drain off the water
  9. season the kidneys with onions. escallion, tomatoes, country pepper, and (if needed) salt and pepper
  10. reheat the oil remaining in skillet, add more if you care
  11. place the kidneys with the seasoning in the pot and cover
  12. simmer for about 20 minutes stirring occasionally
  13. mash 3 pieces of potatoes
  14. pour in the cooking wine
  15. add mashed potatoes and stir in the marjoram and thyme
  16. simmer for 10 minutes
  17. serve while hot
