| Braised rabbit in molasses |
| Sweet rabbit from the oven. |
What you need....
- 2 pounds rabbit
- 2 tsp. black pepper or 1/2 tsp. chopped country pepper
- 2 tsp. salt
- 1 medium onion, finely chopped
- 1/4 cup molasses
- 3/4/ cup water
- 1/4 cup vinegar

How to prepare...
- preheat the oven at 375°F / 190°C (except you use the stove)
- cut the rabbit in serving pieces and rub it with salt and pepper
- place it in a roasting pan or a 'Dutch Pot' and add the onion and the garlic
- mix together the molasses, water and the vinegar
- pour it over the rabbit and cook it in the oven or on top of the 'Dutch Pot' stove in covered pot on a low flame
- baste with liquid periodically until desired colour and tenderness are achieved - about one hour
- serve with cooked green bananas, rice and tomato and a sweet pepper salad
Molasses imparts the desired brown coloration for appetite appeal and contributes the minerals, iron and calcium.
