| Jamaican beef patties |
| Delicious beef patties with Ve-Tsin and hot Jamaican pepper. |
What you need....
- 2 lb. minced beef, ground with fat
- 2 bundles of fresh thyme
- 1 tsp. paprika
- half a loaf of French style bread
- 1/2 tsp. Chinese Ve-Tsin powder
- 2 ozs. escallion
- 2 small hot Jamaican peppers or dried Tabasco peppers
- salt (based on your taste)

How to prepare...
- grind escallion and the hot peppers in a mincing mill
- add to the ground meat with salt
- place meat in a saucepan making a well in the center into which place thyme
- cook without adding any water or fat until the meat has lost its broth and only certain amount of oil remains
- pour off excess oil
- while the meat is being cooked, pour sufficient cold water over the bread in a saucepan to cover and soak for a few minutes, then squeeze dry, saving the water
- pass the bread to the mincing mill and return the ground bread to the water with the thyme and cook until the bread is dry
- combine the meat and the cooked bread
- ass paprika in sufficient quantity to colour the meat and cook together for a further 20 minutes
- add the Ve-Tsin powder
- remove from fire and cool
- fill pastry circles
- fold over, crimp edges and bake
