| Jamaican curried goat |
| Spicy goat (or lamb) meat, flavored with curry. |
What you need....
- 2 tsp. cooking oil
- 1 lb. goat mutton, with or without bones, cut in one-inch cubes
- 2 large onions, peeled and finely sliced
- 2 tsp. allspice (ground)
- 2 cups stock, consomme or bouillon
- 1 tsp. white vinegar
- 1 tsp. curry powder
- pinch cayenne pepper
- 1/4 bay leaf
- 2 dashes Tabasco sauce
- salt (based on your taste)
- boiled rice

How to prepare...
- brown the meat quickly in oil
- remove it, then cook the onion until soft, but not brown
- stir in curry powder and allspice
- cook stirring for a minute, then stir in stock, vinegar, salt and cayenne
- return meat into pan and simmer slowly for about 2 hours
- add the bay leaf 30 minutes before the end
- just before serving, stir in the Tabasco sauce
- serve surrounded by rice
You also can use this recipe with lamb, just replace the gout mutton with the lamb.
If you use meat with the bones, don't forget to suck the bones, before you spit them out. Yes, suck..., don't think on it, just do it, it's delicious :)
