Creamed lobster
Lobster, cooked in Sherry..., hmmmm...
What you need....
  • 1/3 cup butter (or margarine)
  • 2 tsp. flour
  • 2 teaspoons lemon juice
  • 2 beaten egg yolks
  • 1 1/2 cups cooked lobster meat
  • 1/4 cup cooking sherry
  • 1/2 teaspoon salt
  • 1 cup light cream
How to prepare...
  1. melt the butter in a sauce pan
  2. blend in flour, gradually stir in the cream
  3. cool slowly, stirring constantly till it becomes thick
  4. stir a small amount of the sauce into the egg yolks, return to hot mixture and cook till blended, stirring constantly about one minute
  5. do not overcook!
  6. add the lobster, the cooking sherry, lemon juice and the salt
  7. heat before serving in pastry shells made of plain pastry
And... enjoy!
