| Creamed lobster |
| Lobster, cooked in Sherry..., hmmmm... |
What you need....
- 1/3 cup butter (or margarine)
- 2 tsp. flour
- 2 teaspoons lemon juice
- 2 beaten egg yolks
- 1 1/2 cups cooked lobster meat
- 1/4 cup cooking sherry
- 1/2 teaspoon salt
- 1 cup light cream

How to prepare...
- melt the butter in a sauce pan
- blend in flour, gradually stir in the cream
- cool slowly, stirring constantly till it becomes thick
- stir a small amount of the sauce into the egg yolks, return to hot mixture and cook till blended, stirring constantly about one minute
- do not overcook!
- add the lobster, the cooking sherry, lemon juice and the salt
- heat before serving in pastry shells made of plain pastry
