| Shrimp and coconut |
| An exotic combination with garlic. |
What you need....
- 1 lb. uncooked shrimp
- 2 onions, minced
- 2 cloves garlic, minced
- 1 1/2 cups shredded coconut
- salt (based on your taste)
- 4 tsp. lime juice
- 3 tomatoes, sliced thin

How to prepare...
- shell the shrimps
- blend the onions and the garlic to a puree in a blender
- put it with the shrimps and set it aside
- add salt and the lime juice to the coconut, then add this to the shrimp, mixture and mix well
- line a cookie sheet with banana leaves (or use foil instead) and arrange it with a 1/2 sliced tomato
- spread with the shrimp mixture and top it with the remaining tomatoes
- fold over to seal it completely
- bake it in a preheated over at 350°F / 175°C for 40 minutes
- turn package over whilst baking
