| Mackerel marinated in lime juice and served with boiled bananas. |
What you need....
- 1lb. mackerel fillets
- 3 tsp. lime or lemon juice
- 3 cups coconut milk
- 1 large onion, chopped
- 2 cloves garlic
- 1 tsp. fresh hot pepper, chopped
- 1 lb. tomatoes, peeled and chopped
- 1 tsp. thyme
- salt and freshly ground pepper (based on your taste)
- 1 tsp. vinegar

How to prepare...
- pour the lime or lemon juice over the fish and set aside
- cook the coconut milk in a heavy frying pan until it is oily
- add the onion, garlic and cook until the onion is gender
- add the hot pepper, tomatoes, salt and pepper, thyme and vinegar
- stir and cook very gently for 10 minutes
- drain the fish, add the other ingredients and cook again for 10 minutes, until the fish is tender
- serve hot with boiled bananas
If you can find mackerel, salt codfish or lobster can be used instead.
Run down also can be used as a stuffing for breadfruit.
