Run down
Mackerel marinated in lime juice and served with boiled bananas.
What you need....
  • 1lb. mackerel fillets
  • 3 tsp. lime or lemon juice
  • 3 cups coconut milk
  • 1 large onion, chopped
  • 2 cloves garlic
  • 1 tsp. fresh hot pepper, chopped
  • 1 lb. tomatoes, peeled and chopped
  • 1 tsp. thyme
  • salt and freshly ground pepper (based on your taste)
  • 1 tsp. vinegar
How to prepare...
  1. pour the lime or lemon juice over the fish and set aside
  2. cook the coconut milk in a heavy frying pan until it is oily
  3. add the onion, garlic and cook until the onion is gender
  4. add the hot pepper, tomatoes, salt and pepper, thyme and vinegar
  5. stir and cook very gently for 10 minutes
  6. drain the fish, add the other ingredients and cook again for 10 minutes, until the fish is tender
  7. serve hot with boiled bananas

If you can find mackerel, salt codfish or lobster can be used instead.
Run down also can be used as a stuffing for breadfruit.
