| Fish with avocado in white wine. |
What you need....
- 2 fresh fish (e.g. king fish or snapper)
- 1 cup dry white wine
- 1/2 cup water
- 1 teaspoon lemon juice
- avocado juice
- some avocado slices for garnish (optional)
- a few toothpicks

How to prepare...
- roll the fish and secure with toothpicks
- heat the wine, water and the lemon juice to a boil in a 2-quart saucepan
- reduce the heat and place the rolled fillets in he water
- cover, poach over low heat for about 5 minutes
- remove with slotted spoon
