Poached fish with herbed avocado sauce
Fish with avocado in white wine.
What you need....
  • 2 fresh fish (e.g. king fish or snapper)
  • 1 cup dry white wine
  • 1/2 cup water
  • 1 teaspoon lemon juice
  • avocado juice
  • some avocado slices for garnish (optional)
  • a few toothpicks
How to prepare...
  1. roll the fish and secure with toothpicks
  2. heat the wine, water and the lemon juice to a boil in a 2-quart saucepan
  3. reduce the heat and place the rolled fillets in he water
  4. cover, poach over low heat for about 5 minutes
  5. remove with slotted spoon
And... enjoy!
