Codfish fritters
Dried salted codfish.
What you need....
  • 1/4 lb. raw codfish
  • 1/4 lb. flour
  • 1 medium sized tomato
  • 1 medium sized onion
  • 1 small clove garlic
  • 1 tsp. paprika
  • 2 stalks escallion (or leeks)
  • 1/4 tsp. hot pepper
How to prepare...
  1. soak the fish for at least 3 hours, then boil and dice or shred finely
  2. chop the onions, garlic, escallion (or leeks), hot pepper and the tomatoes very fine
  3. place the codfish in a mixing bowl and add the four and sufficient gold water to make a thin batter, similar to that of pancakes, stirring until it is smooth
  4. add the chopped seasoning
  5. have a skillet well heated with oil for frying
  6. spoon the batter into the skillet as you would for pancakes, but use a knife to spread each fritter thin
  7. fry until golden brown and crisp on both sides
  8. drain on paper towels and keep it in a dish in a warm oven until you are ready to serve
  9. spear with toothpicks and serve hot
