| Pumpkin soup |
| With beef, pumpkin, garlic and vegetables. |
What you need....
- 2 qts. cold water
- 1 1/5 lbs. soup meat
- 1/2 lb. bacon slices, cut in half
- 1 1/2 salt / salt to taste
- 2 cloves garlic, crushed
- 2 lbs. pumpkin, diced
- 2 medium white potatoes, diced
- 1/2 red or green pepper, diced
- 1 medium tomato, diced
- 2 stalks escallion, cut in 4
- 2 sprigs thyme or 1 tsp. thyme powder

How to prepare...
- put water in a large soup pan
- add meat, bacon and garlic and bring it to a rapid boil
- simmer meat 1 hour (or more) until it is almost cooked
- add pumpkin and potatoes
- stir and simmer an additional 15 minutes
- add diced peppers, tomatoes, onions, escallion and thyme
- stir and simmer for a final 20 minutes or until all the ingredients are cooked
- adjust for seasoning
