| Ackee soup |
| Soup with ackee, chicken stock and cream. |
What you need....
- 4 cups ackee (canned)
- 1 1/2 cup chicken stock
- 1/2 cup peeled and chopped tomatoes
- 1/4 cup chopped shallots
- 1/2 cup cream
- salt, pepper and tabasco (based on your taste)

How to prepare...
- Put the ackees together with the liquid from the can into a saucepan
- add the chicken stock, tomatoes, shallots
- add salt and pepper to taste
- cover it and simmer gently until the shallots are tender
- puree in an electric blender
- return to saucepan, season to taste with hot pepper sauce, stir in cream and heat through
Ackee soup also tastes very good chilled, garnish, if desired, with chopped chives or with sweet pepper.
