| Ginger beer |
| A soft drink, flavored with ginger, lemon and sugar. |
What you need....
- 1/4 lb. green ginger
- 1/2 gallon water
- 1 large green lime
- 2 lbs. granulated sugar

How to prepare...
- scrape the ginger, then wash and pound it
- put it in a large bowl and pour boiling water over
- stir the sugar until it is dissolved
- peel the lime and add both lime and rind to the liquid
- cool and pour in a glass ware jar
- cover it, let it stand for 6 days, stirring it with a wooden spoon every other day
- when ripe, strain and pour over into bottles
- chill in a refrigerator or
- keep at room temperature to ripen for another 2 or 3 days
